I made sugar cookies the other day with a gluten free flour blend from Gluten Free Gobsmacked. They were delicious!  When I first had to go gluten free, I would scour the internet looking for specific gluten free recipes. Now if the recipe is dense like cookies or brownies, or the flour is just used to thicken a recipe, I use a flour blend. It saves me time, energy, and frustration from searching all over. It doesn't always work though, as I have found out by using a chocolate chip recipe I have used previously that weren't gluten free. The cookies turned out tasting like chips ahoy, only lighter and less salty...
Anyway, I made my own chocolate to using a combination of two recipes, first using Heavenly Homemakers, then Whole New Mom. Soy is a no no, and soy free chocolate chips can be quite expensive. Did it hold up to baking? Nope. Did I follow the recipe? Nope. Did it taste delicious? Why yes, yes it did. I do not even like semi sweet or dark chocolate all that much, but this is divine. It was a semi-sweet chocolate with a bit of a crunch. Now, I wouldn't be saying it's good if it isn't. If it's good, it’s good. If it's meh, it’s meh.
With all this Christmas cookie baking, I have now realized that I am not a Christmas cookie marathon baking kind of girl. No siree. That being out of the way, time to think of Christmas dinner. This time, I'm doubling the amount of people I have to cook for, and I have to plan ahead. Maybe Swiss chard or some type of vegetable medley will do on the buffet. Sides and mains, no biggie. Everything else, umm...ha ha.

Wow, haven’t posted anything in awhile. Life and its crazy friends decided they wanted to catch up…so there were a lot of fun times to be had. I also updated the site two days, learning a lot if new things along the way. But enough of this. Thanksgiving is a couple days away!
I’m finally starting to get the gluten free things down. It’s a big thing, because I like my cookies and brownies. Bread, meh. Never really ate it before so it’s not a biggie for me.
Back to Thanksgiving. Here is my menu. It’s funny because it has been scaled down this year.

Turkey
Macaroni and Cheese or Potatoes Au gratin (GF flour blend substituted for flour)
Rice
GF Focaccia Bread
Roasted squash(or pumpkin in a different part of the world)
Gravy (Brown flour used instead if flour)
Salad
Pumpkin Pie
Two different pie crusts:
Maybe some other things.

Fall has a very special meaning to me. When I was a kid, it was amazing to learn about the different seasons, and how plants change. I lived to far down south to see the beautiful fall colors. The only thing we got was a bunch of leaves to clean up during winter, and that's it. Later on I moved up north, and lo and behold:

It even invaded the canals. Sometimes I wonder how much someone pays for native plants, when they can be outright weeds. Pretty weeds though, which can make all of the difference.
This cypress tree started to change a couple weeks ago. I'm really surprised how long it's taking, because other tees further south look like they're already dead. 
It was funny moving to where I am now, because this was the first tree seeing tree's change in real life. Maybe that's why there so special to me.

Look what came in the mail yesterday.
My Purse Making Kit from American Purse Supplies! It came super fast to. Good thing too because I was starting to get antsy. I prefer not being antsy, especially when a tedious essay is involved.
I was really shocked about the fabric, and how much I liked it. Pink looks fabulous on me, but it's a love hate relationship. If pink would act more like this, then things would be a lot better.

I WON

Came home from school and found out, and literally jumped up and down almost screaming my head off. I never win anything. If I do, the stars are lined up, or it was rigged. Rigging is fine as long as it was in my favor, but this time I actually won WON.

........Just kidding about the rigging.

Anyway, I'm so happy right now. Things are going my way, my health is getting better, and I'm actually staying on my Candida Diet pretty darn well if I say so myself. It's a big thing, since I am genetically disposition to be addicted to potatoes, chocolate, or sugar.

Thank you Lord for all of this. Now time to go off and start running around like a headless chicken again.

The other day I went outside to help my mother with groceries. I was greeted with a lovely sunset. It was about way past time it should have been, so it was a bit odd. The sky was a bright red, and was eerie.


It reminded me of a story that my mother had told me. My great grandmother had told my mother a way to predict hurricanes back in the old day. Just like in the book Their Eyes Were Watching God, people had ways to tell if something was coming. I don’t know how accurate it is, but when I storm is off the coast the sun DOES change. So seeing this isn’t very nice. Maybe a storm is just waving a far away hello.

The other day was really nice out. Plus I was gaining my strength back, and the outdoors kept calling me. It's really annoying for something to keep calling your name over and over again. What's a girl going to do?

Mostly ignore it. But the outdoors was to handsome the other day for me to resist. It was sunny, low humidity, and wasn't trying to kill its next innocent victim with heat.

I don't appreciate that.

Anywayz, off I went to take some "photographs." It was fun, and humiliating at them same time. My baby brother is quite talented in taking photos. I tried to imitate him, but failed. All the macros, flash, and whatever setting I could get working didn't let my photographs come close to his. Unfortunately that means I have to take more photos, but oh well. I'll just do it when the outdoors starts calling my name again.

I love my pink Mexican Petunia's. The purple cousin of it WILL take over the designated area it's planted in. This one grows into a elegant bush. It's not as thick and luscious as its purple cousin, but having not to pull out a ridiculous amount to stop it from killing your other plants makes it perfect.

The awe inspiring pineapple.  Even more inspiring is that snake’s call home where it resides. Sigh... Now I can't wait till it gets cooler so I won’t have to run around the yard anymore.
 
An American Beauty Berry. I hear it can be expensive for some unbeknownst reason. Kind of weird with all of those seeds, huh? Anyway, while searching the all knowing world wide web, I found out it's an insect repellant. Great excuse to use with someone who wants to keep cutting them down. Plus according to Wikipedia, they may be edible. Um, I'll just pass on that pone. Don't want to get sick or turn violet for that matter..   

 SO I have three wonderful pics, and what to do with them all? Why use them for some scripts I found randomly the other day. Oh to Joy.

A Tree that is a Family

I’m finally going to start a family tree.  Amazingly, both sides of my family, with different backgrounds, do not have a clue who each other is. It’s important for me to have an understanding of who I am, and where I come from. Right now my family has only the slightest clue about who we are. Seeing someone that can trace their background for generations is a little disheartening, so maybe that can end someday.

The software I’m using is My Heritage Tree Builder. I like it so far, so that’s a good thing. As of now, I’ll take the easy route and go check my family’s facebook information. Sneaking is always fun. Bad part is that sneaking around won’t get me the information I’ll need, but it will be fun while it last. Then comes the hard part of actually talking to people. The world will soon come to an end…

Today’s is one of that good day’s that sneaks up on you. My head feels like it’s draining whatever cancerous material swimming in my veins. I feel like my energy level is up to, and I can concentrate a bit better. These days use to be rare, but I’m happy God granted me the people and the knowledge to finally get better. It’s been to long, but I think know things will work out in the long run. It’s good to feel like to be on the right track.

I love fishing, it’s in my blood. Feeling a little tug on the line and it fighting back sends the adrenaline going. So it’s funny watching River Monster’s. “He’s got the fish!! YES YES YES YES, noooo… It got loose. He’s got another one! It’s on the shore! IT’S HUGE!!!” I love this show. Now it’s time to get my own fishing rod…

With hurricane season upon us and a lovely tropical storm that didn’t want to go away, it’s time to think about hurricane preparation. You have to think about the usual: batteries, flashlights, portable tv/ dvd blue-ray player, propane stove, ya da ya da ya da… All the great stuff everybody thinks about, including the Red Cross and even ehow!

But what do you do if you have food allergies, or are some type of restrictive diet? Going between food safety, and getting a serious reaction isn’t something anyone wants to go through. It’s much easier to just have an excuse to indulge in junk food, and worry about the pounds (and no reactions) later. Hey, it’s kind of a stressful time. Who knows when the power will come on, the roads will become passable again, or the sweet sound of the ac will come back on again. Even in the crazy heat, memories of eating cheetos, oreos, chips, will bring a smile to my face. Those were the good times, but now they are over.

Being on a gluten free/candida diet does provide its challenges. Then a hurricane comes and throws everything in a bigger loop hole. In all seriousness no one wants to get sick. Ginger Lemon Girl found a great article about being prepared for a hurricane. Who would have thought of dehydrating your own food? It’s safe, and you know exactly what’s in them. Another problem during a hurricane is that I can’t eat many of the canned or prepackaged food (except maybe potato chips). But baking and secondly cooking is something I like to do, so I plan to use what ever know how to make it pain free through a storm.

If a storm may come my way, I have already devised a little list of things to make. Things like crackers, cookies (don’t say a word), bread, and cereal will be on priority list. Buying fresh fruits and vegetables are always a good idea to. I am also blessed that my father magically had a propane stove pop up after our last hurricane, so we can cook some food if needed. Little things such as hot rice will make one’s tummy happy. Other dishes I’m thinking about making ahead of time and freezing are lasagna or macaroni and cheese. Getting a block of dry ice will help keep everything fresher longer, but it’s not high on my priority list. Then there’s plenty of water and whatever type of drink someone wants. In the end, I think we’ll be good for a hurricane.

I always wanted to start a blog, but never actually got around to doing it. Last night, I said what the heck, and here I am typing away. So something I need to be doing is to make things nice and pretty and what ever comes to mind, but I can always do that later. For now, it'll be random things I think about or stumble upon, aka anything fun. Time to start on a brave new world!
